We usually call those green, light green or dark green leaves lettuce. Well, in fact, according to Longman Dictionary of Contemporary English,  lettuce is a round vegetable with thin green leaves used in salads. In other words, the word lettuce should not be used as a general term when referring all kinds of leaves in salads.
我们通常把那些绿色的(各种浅绿、深绿色的)叶子叫做“lettuce(生菜)”。事实上,根据《朗文当代高级英语词典》的解释,lettuce(生菜)是一种圆形的蔬菜,有绿色的薄叶子,会拌在沙拉里。也就是,lettuce并不是一种所谓的通称,并不能用来指代所有拌在沙拉里的蔬菜。

If you ask me to explain more, I will tell you that different kinds of leaves taste differently -- peppery, mildly sweet, bitter, etc. -- and pair well with different dressings or meat.
如果你叫我再进一步解释一下,那么我会说,不同种类的菜叶子味道是不同的(有的带点辣辣的味道,有的微甜,也有的有些苦味),而且搭配的调味汁或者肉类也是不同的。
