#1 伊斯坦布尔不是首都

一提到土耳其,很多人首先想到的城市大概是伊斯坦布尔 Istanbul

它确实是土耳其最出名的城市,但它并不是首都。

土耳其的首都是安卡拉 Ankara

伊斯坦布尔现在是土耳其最大的城市,也是最大的旅游目的地,同时也是这里历史上最重要的一个城市,因为它就是东罗马帝国的都城——君士坦丁堡 Constantinople

A lot of foreigners who aren’t familiar with the country thinks that Istanbul is the Turkish capital. But that’s actually not the case. It’s the biggest city in Turkey, but the capital is Ankara. 
许多不熟悉这个国家的外国人都以为伊斯坦布尔是土耳其的首都。但事实并非如此。它是土耳其最大的城市,但土耳其的首都是安卡拉。

 

#2 咸的酸奶你喝过吗?

土耳其的酸奶默认是咸的,加盐。

不光有基本款的咸酸奶,还有加各种料的咸酸奶,比如加蒜蓉、辣椒油、橄榄油的酸辣酸奶,直接就是一道菜。

他们还会用酸奶做汤,比如下面这张图就是一碗加了薄荷的酸辣酸奶汤:

其实他们也吃甜酸奶,常见的吃法是加蜂蜜。

另外, 酸奶在土耳其除了是饮料,还被广泛用来做蘸料,也是烹饪的重要原料。

Yogurt is easily the national food item of Turkey, and thus it has to be on any Turkish food guide worth its salt. Yogurt is served as a dip, a sauce, or even as a drink – it is everywhere and in all forms. You’ll have no problem sampling some if you order any variety of mezze, but the best way to consume it is either in its pure form with a little honey, or as a drink served with salt.
酸奶无疑是土耳其的国民食品,因此它一定会出现在各种土耳其美食指南上。酸奶可以作为蘸料、酱汁甚至饮料,它无处不在,形式多样。你点任何一种mezze来品尝酸奶都没有问题,但是它最好的食用方式是只加点蜂蜜,或加盐饮用。

 

#3 用鸡胸肉做甜点

You might find chicken in your dessert. The signature Ottoman treat is tavuk göğsü, or chicken breast pudding. It’s a strange blend of boiled chicken, milk, and sugar, dusted with cinnamon. And it’s delicious. Look for it on menus across the country.
你可能会在甜点里发现鸡肉,这道标志性的奥斯曼菜肴就是鸡胸肉布丁。这是一道把煮熟的鸡肉与牛奶和糖混合在一起,并撒上肉桂的奇怪菜肴。这道菜很美味,在土耳其各地的菜单上都能找到它。

 

#4 他们认为中国修长城是因为他们

如果你去看土耳其国内的英文教材,可能会看到这样一句话:

Our great ancestors forced the great Chinese to build up the Great Wall. “我们伟大的祖先迫使伟大的中国人修了伟大的墙(长城)。”

他们认为我们修长城是因为他们。

额,我们来把这里的历史屡清楚。

土耳其人 the Turks 是西突厥人的后裔,是西突厥人被唐朝打败后西迁过去和当地人混血而来的。

而中国长城的主体是用来挡匈奴人 the Huns,现在的土耳其认匈奴人做祖先,然而现在的人类学研究其实觉得他们没关系。

你要是说长城是用来防匈牙利,那倒还靠谱一点,因为匈牙利是匈奴人建立的国家。

 

#5 为什么和火鸡同名?

你有没有好奇过,为什么土耳其叫 Turkey ?为什么和火鸡 turkey 是同一个单词?

难道是和中国类似?因为中国产瓷器 china,于是叫了 China。那土耳其难道是因为产火鸡所以才叫 Turkey ?

但是火鸡在土耳其又不叫火鸡,叫“印度鸡”,所以这条路肯定说不通。

实际上,火鸡这种动物在全球的名字都极其混乱,英语里叫它“土耳其”,土耳其叫它“印度鸡”,印度人又叫它“秘鲁鸡”,中东人叫它“希腊鸡”,希腊人又叫它“法国鸡”,马来西亚叫它“荷兰鸡”,东非的人甚至叫它“巨鸭”。

其实吧,上面说的那堆地方全都不是火鸡的原产地,它是北美的物种。

而它之所以叫 turkey 是因为:最早是土耳其把火鸡引进了欧洲,然后欧洲就开始叫它“土耳其鸡”,久而久之就干脆简称“土耳其”了。

所以,土耳其这个国家才是最早使用 Turkey 这个名字的,和火鸡没关系。

The turkey bird is called hindi in the country of Turkey because they believe it originated in India. The republic of Turkey (look north of Egypt, east of Greece) isn’t exactly a breeding ground for the bird that Americans associate with Thanksgiving. In fact, the turkey is native to North America … so, why do they share the same name? To understand this, we have to get to know another bird: the guinea fowl. This bird bears some resemblance to the American turkey. The guinea fowl is actually native to eastern Africa and was imported to Europe through the Ottoman Empire. Once imported, Europeans came to call the guinea fowl the turkey-cock or turkey-hen, because the bird came from the Turks. When settlers in the New World began to send similar-looking fowl back to Europe, they, out of familiarity, called them turkeys.

#7 水果好吃又便宜,但是迷恋中国柚子

土耳其是个盛产水果的国家,地中海的气候让这里的水果又便宜又好吃。

其中最出名的应该是土耳其的无花果 fig

土耳其的国土有1/5都被无花果树覆盖着。

不过,虽然自己的水果又便宜又好吃,但土耳其近几年却迷上了中国的柚子,火到爆炸

此外,土耳其也是全球最大的榛子生产国。

Turkey is the largest producer of hazelnuts. Hazelnuts comes from the Corylus tree and they are loaded with nutrients such as magnesium, vitamin e, healthy fats and much more. It’s also a great source of antioxidants.
土耳其是最大的榛子生产国。榛子产自榛树,富含镁、维生素E、健康油脂等营养物质。它也是抗氧化剂的重要来源。

 

#8 著名的土耳其彩瓷,源自中国青花

如果要问土耳其有什么纪念品值得买,那一定要说绚丽的彩瓷。

这种特产其实源自中国的青花瓷。

古代土耳其特别迷恋青花瓷,但当时青花瓷真的贵,很多人买不起,于是他们试着就自己研制,后来就自我发挥,搞出了别具一格的彩瓷。

 

#9 基本是亚洲国家,但非要自认是欧洲国家

土耳其国土的97%在亚洲,只有3%在欧洲,但却一直自认为是欧洲国家,死活不愿意参加亚运会。在欧盟的候选名单里躺了20年也没进去。

说来巧,伊斯坦布尔就坐落来欧亚大陆的交界处,而且也是3%在欧洲,97%在亚洲。

The former imperial city is also home to the Tünel, a short funicular that’s the second-oldest continuously running underground railway after London’s.

It has one of the world’s oldest and biggest malls. Istanbul‘s Grand Bazaar, or Kapalı Çarşı, dates to 1455 and was established shortly after the Ottoman conquest of Constantinople. Over the centuries it has grown into a warren of 61 streets lined by more than 3,000 shops and currently occupies a nearly incomprehensible 333,000 square feet. You’ll never possibly be able to explore it all, but that doesn’t keep people from trying — according to Travel + Leisure, the Grand Bazaar was the world’s #1 attraction in 2014, drawing over 91 million people.

The edgy Istanbul Biennial, now in its 16th edition, is a must-see for the international art crowd, and with more than 300,000 visitors in 2013, it ranks among the top contemporary art shows in the world. In 2015 the show will occupy 30 venues on both sides of the Bosphorus.

#12 《东方快车》的终点站

如果你喜欢读侦探小说,那你应该就知道本格推理小说大师“阿婆”——阿加莎·克里斯蒂 Agatha Christie

如果你知道阿婆,那你肯定就知道她的名作《东方快车谋杀案》Murder on the Orient Express

小说中的这趟东方快车是真实存在的,它的终点站就是伊斯坦布尔。

你现在去伊斯坦布尔还能看那个火车站,只是这趟列车已经不运营了。

Istanbul is the home of the Sirkeci Train Station, which was the last stop on the Orient Express, which ran between Paris and Istanbul from to 1883 to 1977. British mystery author Agatha Christie was one of the famous passengers on this famous train.
伊斯坦布尔是希尔凯吉火车站的所在地,它是东方快车的最后一站,从1883年到1977年,东方快车在巴黎和伊斯坦布尔之间运行。英国推理小说家阿加莎·克里斯蒂是这列著名火车上的著名乘客之一。

 

#13 全球最爱喝茶的国家

Turkey has the highest consumption of tea per capita. Did you know that around 96% of the total population drinks at least 1 cup of tea per day? It’s estimated that Turks consume 3 kilos of tea per person a year. So, if you visit Turkey, then you shouldn’t miss out on a traditional tea experience!
土耳其人均饮茶量全球最高。你知道吗, 96%的土耳其人每天至少喝一杯茶。据估计,土耳其一个人一年消耗3公斤茶叶。所以,如果你去土耳其旅游,那你一定要体验一下传统的土耳其茶!

而且他们也喜欢一边喝茶一边打“麻将”,不是我们的麻将,是土耳其麻将。

 

#14 全民酷爱甜食,爱到癫狂

土耳其人超级爱吃甜食,不光发明各种甜食,而且还强行找各种理由吃甜食。

生活中有任何重大活动都要吃甜点,生了孩子要吃甜食,葬礼要吃甜食,甚至还能把茄子一类的蔬菜做成蜜饯。

According to Turkish tradition, all major life events begin with eating sweets. A baby is welcomed at birth with halva, and it is also made again for a funeral. When a woman gives birth, she is given sweet fruit drinks to drink. They even make candied veggies and fruits like eggplants or olives.
按照土耳其的传统,生活中所有重大的活动都要先吃甜点。婴儿出生时,人们会用哈发糕来迎接他的诞生,在葬礼上也会准备这种甜点。女人生产时会喝甜甜的果汁饮料。他们甚至还制作了茄子或橄榄这样的蔬菜和水果蜜饯。

因为甜食的消耗量真的太大了,所以土耳其人的牙不好,发病率98%。

 

#15 著名的土耳其软糖

虽然甜食对牙不好,但我们一定要说土耳其的传世名产——土耳其软糖 Turkish delight

土耳其软糖的种类非常多,在古代就是很受欢迎的出口货。

虽然如今在天猫一类的平台也能网购到,但种类很有限,而且风味比不上去土耳其吃原版的。

英大我超喜欢那种外面裹了干玫瑰花或者开心果的款,就是图中后排的绿色和枚红色那两款。

Turkish Delight, or lokum, is one of the oldest sweets in world history, dating back 500 years. Napoleon and Winston Churchill were particularly fond of the ones with pistachio filling, and Picasso used to consume it daily while painting.
土耳其软糖是世界上最古老的糖果之一,可追溯至500年前。拿破仑和温斯顿·丘吉尔特别喜欢开心果馅的土耳其软糖,毕加索画画的时候每天都要吃土耳其软糖。

 

#16 占领大街小巷的面包圈

土耳其最常见的主食是什么?那应该就是遍布大街小巷的土耳其面包圈 simit

这种裹满了芝麻的甜面包圈已经成了土耳其的一张旅游名片,街上一车一车地卖。

细心的同学可能已经发现了,上面这张图我们在希腊冷知识里也用过。

没错,这就是个希腊的面包圈。这两个国家互为邻居,都在街上卖这个,而且都说是特色,但其实互相之间没啥区别。

不过反正这东西挺好吃的,特别是新鲜做出来的时候。

Simit, It’s kind of like a slightly harder sesame seed bagel?  Gets the job done in a pinch.  You’ll see carts full of them, as well as intrepid vendors carrying a board stacked high with them on their heads.
Simit(芝麻圈面包)有点像硬一点的芝麻百吉饼?东西简单,但管饱而且方便。你会看到一车一车的芝麻圈面包,还有头上顶着木板,上面摞着高高的芝麻圈面包的勇敢的小贩。

 

#17 土耳其冰淇淋

土耳其甜食里的又一霸主,套路极深的土耳其冰淇淋。

土耳其的冰淇淋师傅是真的皮,会向玩杂技一样把你的冰淇淋翻来覆去调戏。

土耳其冰淇淋之所以能这样玩,是因为它的质地很特殊,堪称世界上最坚韧、最有嚼劲的冰淇淋,也有人称其为会飞的冰淇淋。是唯一能用刀叉吃的冰淇淋。

Turkish ice cream or dondurma. This thicker, stretchier version of ice cream typically includes mastic and salep (a flour made from orchids), and is super interesting.  It is more resistant to melting than regular ice cream, and you will usually get a bit of a show from the vendor as well.
土耳其冰淇淋又名dondurma。这种更稠、更有弹性的冰淇淋里往往会有乳香脂和色列普淀粉(一种由兰花制成的面粉),非常有吸引力。它比普通的冰淇淋更不易融化,通常卖主也会向你展示一番。

 

#18 考古大国

目前发现的最古老的人类城市就在土耳其,它叫恰塔霍裕克 Çatalhöyük

有迹象表明公元前7世纪就有人类居住于此。

而且,像这样的重大考古遗址在土耳其有非常多,并且还在不断被发掘,每年至少有150场考古挖掘活动正在进行。

The stones found at Göbekli Tepe in Turkey in 1994 mark it as the world’s first temple and one of the most important archaeological sites ever discovered. Carbon dating shows the 45 stones may be as old as 13,000 years old—which makes it the oldest site by an amazing margin, considering Stonehenge was built around 2,000 to 3,000 years ago and the pyramids of Giza 2,500 years ago.

#19 很多传说中的重要地点

Turkey is packed with cultural heritage. In fact, there are 13 spots in Turkey inscribed on UNESCO’s list of World Heritage Sites, and a whopping 62 on the tentative list. They range from a Mesolithic temple (Göbekli Tepe) to a Biblical city (Ephesus) to a World War One battlefield (Gallipoli), and help make Turkey the sixth most-visited tourist destination in the world.
土耳其有着丰富的文化遗产。事实上,土耳其有13处景点被列入联合国教科文组织世界遗产名录,还有多达62处景点被列入暂定名单。从中石器时代的庙宇(哥贝克力石阵)到圣经中的城市(以弗所),再到一战的战场(加利波利),这一切使土耳其成为世界第六大旅游目的地。

 

#20 传说人物的出生地

土耳其是很多古代名人和传说人物的故乡,例如伊索 Aesop荷马 Homer圣保罗 St. Paul迈达斯国王 King Midas、罗马帝国著名的内外科医生兼医学研究员兼哲学家盖伦Galen,还有史学之父希罗多德 Herodotus 

另外,圣诞老人也是土耳其人。

圣母玛利亚的葬身地很可能也在土耳其。

Santa Claus is from Turkey. Saint Nicholas was born far from the North Pole, in Patara. And he’s not the only saint with connections to Turkey — the Virgin Mary’s resting place could be near Ephesus, while Saint Paul was from Tarsus in the south. Other Biblical figures include the Prophet Abraham, born in Şanlıurfa.

#21 诺亚方舟的着陆地

Noah’s Ark is purported to have landed on Mount Ararat in Eastern Turkey. The mountain is actually a dormant volcano and the highest point in the country at 16,949 feet (5,166 m).
据说诺亚方舟曾在土耳其东部的亚拉腊山着陆。这座山其实是一座休眠火山,也是这个国家的最高点的所在,它高达16,949英尺(5,166米)。

 

#22 方舟上的一道甜点,依然能吃到

传说中,他们在诺亚方舟上吃的最后一餐是一种叫阿舒瑞 Asure 的甜点,这是一种材料超级丰富的酸甜布丁。

现在的土耳其人依旧会吃这道甜点,我们有时候也把它翻译成“土耳其八宝粥”

The last meal on Noah’s ark, a sweet and sour pudding called “ashure” (Turkish aşure), is still served as a dessert throughout Turkey. It supposedly contained 40 different ingredients, which were the remainders of his supplies.
诺亚方舟上的最后一餐是一种名为“ashure”(土耳其语为aşure)的酸酸甜甜的布丁,目前土耳其人依然用这道菜作为甜点。据说它有40种不同的配料,这些配料是诺亚的剩余物资。

 

#23 引以为傲的茄子料理

茄子在土耳其所在的东地中海是很常见的食材,而土耳其的有些名菜就是用茄子做的。

这其中最出名的大概是土耳其烤茄子 Imam Bayildi

İmam bayıldı is a Turkish dish made from eggplant cooked with olive oil and filled with onions, garlic, and tomatoes and served at room temperature. It translates as the “imam swooned,” suggesting that the dish was so delicious that the imam, or prayer leader of the mosque, fainted at the sight and taste of it.
烤茄子是一道土耳其菜肴,它是用橄榄油烹制茄子,并加入洋葱、大蒜、西红柿做成的,可在室温下享用。İmam bayıldı翻译过来就是“伊玛目昏倒了”,意思是这道菜太美味了,以至于清真寺的领拜师伊玛目一看到并尝到这道菜就昏倒了。

 

#24 茄子的做法有很多

另一个知名的土耳其茄子菜是炖肉配烟熏茄子泥 Hünkar Beğendi,这个原版名字太难记了,还好它有个别称叫“苏丹的喜悦” Sultan’s Delight

苏丹也就是以前奥斯曼帝国皇帝的称谓,所以感觉这道菜也能翻译成“乐皇上”?

那前面那道“伊玛目晕了”好像能翻译成“土耳其佛跳墙”。

Hünkar Beğendi, also known as Sultan’s Delight, this dish consists of tender, slow-cooked beef, served over a smoky eggplant puree. It truly is a dish fit for a sultan.
Hunkar Beğendi也被称为苏丹的喜悦,这道菜是用慢炖的嫩牛肉配上烟熏的茄子泥做成的。这确实是一道配得上苏丹的菜。

 

#25 船型的土耳其披萨

土耳其有自己的披萨,这个东西叫皮叠饼 pide,很多人也直接叫它土耳其披萨 Turkish pizza

它看起来和意大利披萨很不一样,是做成船型的,把丰富的馅料锁在里面。

土耳其披萨有大有小,大的会被横切成好几段来吃。

Pide, more fondly known as Turkish pizza, this was the first thing I ate upon arrival to Turkey. It’s made with slightly thick and hearty bread, and topped with spiced minced meat, veggies, and/or cheese. Sometimes it’s served like an actual pizza, and other times it’s wrapped, almost like a tamale. Either way, it’s delicious and it’s cheap! It can be found at most restaurants, although I found it to be freshest at the specialty bakeries.
Pide是我到达土耳其后吃到的第一种食物,人们亲切地称之为土耳其披萨。它是用稍微厚一点的美味面包做成的,上面撒着五香肉末、蔬菜和/或奶酪。有时它像普通的披萨一样被端上餐桌,有时它被裹起来,就像玉米粉蒸肉一样。不管怎样,它既美味又便宜!大多数餐馆都有这种披萨,但我觉得特色面包店里的最新鲜。

 

#26 土耳其也有馄饨

土耳其馄饨 manti 的皮是用意大利面做的。因为面里有黄油和鸡蛋,所以比我们的馄饨厚实有嚼劲。

他们的馅料和我们差不多,主要是蔬菜和肉。但土耳其馄饨的吃法很不一样,是淋上原味的酸奶和调料。这好像更适合翻译成“土耳其抄手”?

Manti, or, as the waitress at Ficcin called it, Turkish ravioli. Ravioli, dumplings, whatever you want to translate it as – this stuff is delish! It’s a pasta dish stuffed with either veggies or meat (I had both a potato and beef version), and topped with yogurt and spices.

Menemen A.k.a. super fancy scrambled eggs.  It includes just-barely-set eggs, tomatoes, peppers, spices, and sometimes meat and/or onions.  It’s meant to be quite runny, like the Turkish version of shaksouka, and you eat it for breakfast with bread to sop up the delicious liquid.

Mezze is not a single item; rather, it’s a collection of small plates of different foods. Hot, cold, meats, veggies – you name it, it’s served as mezze! It’s essentially the appetizer course, and, depending on the restaurant, is offered on a large tray where you can select each plate that looks appetizing. It’s an excellent way to sample a variety of dishes such as spreads, stuffed grape leaves, and so much more.

It’s uncertain where the first tulips were grown, but what is known is that the Ottomans popularized the flower and facilitated their introduction to Europe. Other commodities for which Europe owes a debt of gratitude to Turkey are coffee and cherries. About one-quarter of the roses grown in the world come from Turkey.

#30 几乎全民穆斯林,却有很多基督教圣地

土耳其人几乎全是穆斯林,但国内却有很多基督教体系的圣地,每年都有成千上万的基督徒去土耳其朝圣。

It’s home to some of the most important sites in Christendom. Turkey’s population may be 99% Muslim, but these lands draw tens of thousands of Christian pilgrims each year. The Ecumenical Patriarch, spiritual leader of the world’s 300 million Orthodox, lives in Istanbul, a vestige of the Byzantine Empire. The grotto dug by the Apostle Peter in Antioch was the first Christian house of worship, while a 1st-century patriarchal church is said to have been located underground in today’s unprepossessing Istanbul district of Fındıklı. The Hagia Sofia, or Church of the Holy Wisdom, cathedral in Istanbul was the largest cathedral in the world for nearly a thousand years. Following the Ottoman conquest of Constantinople in 1453, it was turned into a mosque, and it has been a museum since 1935.

Mustafa Kemal Ataturk is the father of the modern Turkish nation. When he rose to power in 1921, he lifted the ban on alcohol, adopted the Gregorian calendar instead of the Islamic, made Sunday a day of rest instead of Friday, changed the Turkish alphabet from Arabic letters to Roman, and mandated that the call to prayer be in Turkish rather than Arabic. He even banned the iconic red Turkish fez hat.

土耳其的世俗还体现在人们的上网活动上,他们的Facebook用户数在全球排名第3,而且是Facebook上最活跃的用户。

Turkey has the third highest number of Facebook users in the world, with 14 million users, after the U.S. and U.K. 97% of the population uses Facebook, and the Turks are known as the most active users.

#33 画风激烈的橄榄油摔跤

Oil wrestling is the national sport. The spectacle of two bulky men stripped to the waist, doused with olive oil, and grappling under the hot Thracian sun is a 654-year-old sporting tradition and sight to behold. Camel wrestling tournaments, held throughout the Aegean region in the winter, and bull wrestling near the Black Sea, are also popular.

#35 生物多样性非常好

土耳其的动植物种类都很多,生物多样性在全球排在前列。

另外,伊斯坦布尔的猫挺多的。

The evil eye amulet is the most bought turkish souveni. In Turkish, it’s known as nazar boncuğu, and it’s meant to protect against the evil eye and other harmful spirits. This symbol is also found in many other countries where the Ottoman Empire was present. The tradition of making this type of glass art with the evil eye nazar is said to go back at least 3000 years.

Turkey has had equality for women going back a millennium to the Hittite civilization, and it gave women the right to vote before most European countries and the United States (1930 for local elections, 1934 for national elections).

#41 大部分土耳其人本来没有姓氏

土耳其和日本一样,大部分人本来是没有姓氏的。

而且他们的姓氏来得比日本还晚,是在1934年,也就是现代土耳其建国好多年后才颁布法律让全民使用姓氏。

Most Turks did not have surnames until a law was passed requiring it in 1934. The most common last names in Turkey are Yılmaz (never gives up, undaunted), Kaya (rock), Demir (iron), Şahin (falcon or hawk), and Çelik (steel).
1934年土耳其通过了使用姓氏的法律,而在此之前,大多数土耳其人都没有姓氏。土耳其最常见的姓氏有伊尔马兹(Yılmaz,意为永不放弃的,勇敢的)、卡娅(Kaya,意为岩石)、德米尔(Demir,意为铁)、萨现(Şahin,意为猎鹰或鹰)和瑟里克(Çelik,意为钢)。
